Brine Soak/Marinade to Prepare Meat for Smoking

This is a simple brine recipe for soaking fish, poultry or meat prior to smoking. As you can see the flavour can be customised to your taste.

1/4 cup salt
1/4 cup brown sugar (compacted)
4 cups water
You can add other elements to this basic mixture to give flavours to your own taste. Pretty much anything will work, such as Herbs & Spices, Red or White Wine, Sauces such as Soy or BBQ, etc.

Combine the salt, sugar and water in a mixing bowl and whisk until all the salt and sugar is dissolved. Add your chosen flavourings if desired then pour mixture over the meat, poultry, or fish to be smoked, ensuring that it is fully covered then soak for several hours, or overnight.
